Tender pieces of chicken and crisp-tender broccoli come together in a savory sauce made with soy sauce, chicken broth, garlic, ginger, and a touch of sugar. This simple stir-fry is cooked in one skillet or wok and finished with a lightly thickened sauce.
Ingredients
- 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
- 2 garlic cloves, finely chopped
- 2 teaspoons finely chopped fresh ginger
- 1 cup chicken broth
- 3 tablespoons soy sauce
- 2 teaspoons sugar
- 2 cups broccoli
- 2 teaspoons cornstarch
- Cooking spray
Instructions
- Heat the Skillet: Coat a 12-inch nonstick skillet with cooking spray and place it over medium-high heat. A seasoned wok can also be used.
- Cook the Chicken: Add the chicken pieces along with the chopped garlic and ginger. Stir-fry for 2 to 3 minutes, or until the chicken develops a browned exterior.
- Add the Sauce Ingredients: Pour 3/4 cup of the chicken broth into the skillet, followed by the soy sauce and sugar. Cover the skillet and reduce the heat to medium. Cook for about 5 minutes, stirring the mixture twice during cooking.
- Cook the Broccoli: Add the broccoli to the skillet and cover again. Continue cooking for approximately 5 minutes, stirring occasionally. The chicken should no longer be pink in the center, while the broccoli should remain crisp-tender.
- Prepare the Thickener: In a small bowl, combine the cornstarch with the remaining 1/4 cup of chicken broth. Stir until the cornstarch is fully dissolved.
- Thicken the Sauce: Pour the cornstarch mixture into the skillet with the chicken and broccoli. Cook while stirring frequently until the sauce thickens and coats the ingredients.
